JW Marriott San Antonio Hill Country Resort & Spa

I haven’t posted in a while due to my birthday celebrations this month! During that time I had the opportunity to visit The JW Marriott San Antonio Hill Country Resort & Spa.  This Hill Country resort is home to 36-hole TPC San Antonio, featuring two championship courses on the PGA TOUR, including the Valero Texas Open. It’s a pretty new resort decorated with the Hill Country in mind. Lots of wood and stone with grand ceiling heights.  The landscaping is immaculate. There are flowers everywhere. It’s a beautiful resort. There are lounge areas everywhere to just pop a squat and relax with full service for bites and beverages.  The staff was warm and welcoming ready to assist with every need. Due to my hubbies Platinum status with Marriott we were promptly upgraded to an Executive Suite. It was a spacious room with a balcony that spanned the width of the room.  The highlight of the resort for me was the Lazy River. I never knew how much I needed this in my life until I was relaxing in this one. With a cocktail in your hand and the slow current of the river gently pushing you along, you can’t help but relax. I can easily see why this hotel is ranked as one of the top 500 hotels in the world in by the readers of Travel + Leisure Magazine.  I see a return visit to this resort in my near future.

Aruba Blue

Here is my nail color for the next few days. Yes, the next few days. It’s so easy to do and I’m addicted to having a fresh paint job on my nails.
Aruba Blue by Essie. Dark enough so it’s not distracting but bright enough to see the blue color. “Escape to paradise with this frosty saphire blue nail polish. This vacation in a bottle is an essie salon pedicure favorite.”

So I have a new recipe to share. It was surprisingly simple. I was on twitter following spitfire Chrissy Teigen https://twitter.com/chrissyteigen and she posted an easy recipe for Jambalaya. Of course I made a few changes.  Instead of Emeril’s ESSENCE I used Tony Chachere’s Creole Seasoning. I chopped the veggies really small so they aren’t so chunky.  Also saute them longer than the recipe calls for.  My personal critic (my hubby) gave it two thumbs up. Enjoy !

 Here is My Jambalaya:




12 medium shrimp, peeled, deveined and chopped
4 ounces chicken, diced
1 tablespoon Creole seasoning, recipe follows
2 tablespoons olive oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
2 tablespoons chopped garlic
1/2 cup chopped tomatoes
3 bay leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
3/4 cup rice
3 cups chicken stock
5 ounces Andouille sausage, sliced
Salt and pepper
Emeril’s ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

In a bowl combine shrimp, chicken and Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.

Emeril’s ESSENCE Creole Seasoning (also referred to as Bayou Blast):
Combine all ingredients thoroughly.

Yield: 2/3 cup

Vegas Baby

Just got back from Vegas and decided to review the suite I stayed in. The Lanai Suite #11 at The Cosmopolitan of Las Vegas. It was great. Two stories with sleek silver finishings and contemporary decor. The entire suite was controlled from a hand held pad. You could opens the shades and drapes separately as well as control the lighting and change the TV channel. Which the TV of course was a drop down screen from the second floor ceiling to be viewed from the upstairs bedroom. There were two bathrooms and a kitchenette. Oh, did I forget to mention I had my own private hot tub on my patio that had private access to the rooftop pool area. Very VIP indeed !

Change Up

So I decided to do a little updating to my crib. Starting with the room that the previous owner used as their nursery. It was pink and green and very girly. The ceiling fan even had butterfly details. It had to go. I painted the room a neutral color then replaced the ceiling fan. Not a lot of cash for a guest room that now matches the rest of the house.

Ritz Carlton Cancun

So I just came back from Cancun. I had an amazing time. Definitely not what I remember when I went at 18 years old. Went down for a quick little de-stress and relaxation. The room was well appointed with a steel-blue theme, very luxurious. My room overlooked a courtyard with a pool with the ocean as the backdrop. The lobby had fresh sunflowers which made it bright and welcoming. The hotel was a mix of old glamour and new luxury. There were beautifully ornate chandeliers everywhere. The Ritz Cancun is currently undergoing a full renovation.

The weather was beautiful. 82 degrees with a nice ocean breeze and full sun with intermittent clouds passing by.  The beach was sandy and not too hot.  The service was awesome. The attendants set me up on the beach with a comfortable chair and an even better view. I had Nachos for lunch and definitely was satisfied. While at the pool they came by with cool towels and homemade popsicles. I had  fresh strawberry.

At night I enjoyed a wonderful dinner directly across from the property at Harry’s Cancun http://www.harrys.com.mx/ . It’s definitely a must see dinner spot for any visit to Cancun. The ambiance was great and the food was even better.

I had excellent service during my stay.  I will definitely return. It’s a quick 2 hour flight from Dallas which makes it even that more convenient. Enjoy the photos. I did…
